Smokin’ Lava Cakes

1 cup butter

12 oz high quality chocolate (I go for 60% dark)

4 eggs

4 egg yolks

½ cup sugar

6 tablespoons flour

2 tablespoons brandy or bourbon

8 greased 6 oz ramekins


EGG set up

Set the EGG up for indirect cooking, using the convEGGtor, and stabilize at 450⁰ F.

In a bowl whisk together the sugar and eggs until they are pale yellow and fluffy then stir in the flour and alcohol

Using a double broiler melt the butter and then add in the chocolate

Whisk the chocolate as it melts to ensure it is smooth

Using a rubber spatula quickly fold the chocolate into the egg mixture. Be sure to stir the entire time and to incorporate it slowly so the eggs do not scramble

Grease and flour the ramekins and fill each ramekin to about ½ inch from the top

Place on the EGG and bake 12 minutes, you are looking for a center with a slight wobble and firmly set edges. Allow them to cool for 5 minutes then turn them out of the ramekins onto plates and serve immediately.

Serve with ice cream, whipped mascarpone, or mascarpone stuffed strawberries dipped in white chocolate rolled in pistachios.
