Duck Skewers

1-1/2 lbs. Maple Leaf Farms boneless, skinless, duck breast
1 Tbsp. balsamic vinegar or red wine vinegar
1/3 cup red wine
1/2 cup apricot preserves
1/4 cup olive oil
1 red pepper, sliced to 1-inch squares
1 green pepper, sliced to 1-inch squares
2 cans (16 oz.) apricot halves

1. Cut duck into 1-inch cubes. 2. Mix vinegar, wine, preserves and olive oil in a large bowl. Add duck cubes and stir to combine. Marinate 4 hours. 3. Soak 35 6-inch wooden skewers in water for at least 4 hours. Or use metal skewers 4. Drain the duck. Drain the skewers. Thread one duck cube on one skewer followed by a red or green pepper piece, then an apricot half and ending with another cube of duck. 5. Broil or grill for 5-8 minutes. Serve hot!
