Balsamic Glazed Pork Chop
4 3/4 inch thick center cut pork chops
Salt and pepper
Olive oil
6 small shallots quartered
2/3 cup balsamic vinegar
1 1/2 cup sugar

Season the pork chops with S&P. Heat a large (All Clad) skillet with the oil until hot but not smoking. Cook the pork chops and the shallots until the pork chops are golden brown on both sides. Transfer the pork to a plate to rest. Add the vinegar, sugar and a little s&p and cook until the sauce thickens, about a minute. Reduce the heat to med-low and add the pork and its juice back into the pan. Cook until the pork is just cooked through , about 3-4 minutes, turning once during this process. Remove the pork to a serving plate and crank the heat up to high and cook the sauce until thickened and syrupy. Pour sauce over the chops.
