Meatloaf ***
First before starting this recipe please note a few things. Bison is extremely
lean so therefore you will need to add a little fat(which is not a bad thing).
Secondly make a patty before you make a meatloaf to taste for seasoning.
2 1/2 lb ground bison 1/2-3/4lb of Andouille sausage 2 eggs beaten 1/2
cup Ketchup 1/2 cup chopped onions S&P 1/4 cup bread crumbs(plain)
I always render the sausage first because I don't want all the fat. Take the
sausage and pulse in the food processor till it looks like ground beef. Mix
everything together in a large mixing bowl. Place back into the frig for at
least 30 min(an hour is better) Now take a small fry pan and make a small patty
and cook till done.Does it have enough seasoning? too dry? If everything is
a go then place the meat in a 9x5 loaf pan and then into a 350 degree oven. Cook
till you get an internal temp of 150. (about an hour) Remove from pan and
rest about 15 min's with a foil tent.
*** I topped my loaf with the rest of the ground sausage(just a thought)
