Caribbean Black Beans
1 cup white onions

½ cup green peppers

½ cup red peppers

½ cup yellow peppers

½ bunch cilantro

4 ounces grass fed butter

2 tablespoons dry jerk or cajun seasoning

1 tablespoon seasoned salt

3 tablespoons ground cumin

6 (15.5-ounce) cans Allen’s Black Beans

Dice all onions and peppers into 1/4-inch cubes with a chef’s knife.

Rinse and pat dry cilantro before serving. Then mince cilantro leaves with a chef’s knife. Place on the side.

Place margarine, diced onions and peppers in saucepot over medium heat. Add cilantro and seasonings; mix.

Sauté for 15 minutes or until onions and peppers are tender.

Add black beans; do not drain. Reduce heat to simmer and cook for 15 minutes.

If not eating now, immediately place in an ice bath.

Cool quickly to below 40 degrees, stirring occasionally.
