Carrot Halwa
Ingredients
Serves: 4


Thick Grated Carrots 400 grams or 1lb
Regular cream - 4oz 
Granulated sugar - 100 grams 
Ricotta Cheese - 1 cup 
Cardamom powder - 1 tsp
Cashews - 1/4 cup 
Pistachios - 1/4 cup 
Milk - 2 tbsp
Saffron - 10 - 15 strands 
Butter - 3 tbsp 


Instructions


  1. In a bowl take grated carrots and cream mix it and cook it on 250 F in BGE for 20 - 25 mins in-between stir it. 
  2. Soak saffron strands in 1 tbsp hot water and 2 tbsp milk. 
  3. When the carrots are cooked and water is completely evaporated add Ricotta cheese and let it cook for few mins when it starts boiling add sugar and cook for five mins. 
  4. Add the soaked saffron into the pot. 
  5. Add two tbsp of butter or ghee 
  6. Heat 1 tbsp butter in a pan add cashews and pistachios. Sauté it for 2 mins add it in the ready carrots. 
5.   Mix cardamom powder. Serve it warm.
