Chef Mike's Apple and Cheese Corn Muffins
Serves: 14 Muffins

------------------------------DRY INGREDIENTS------------------------------
1 2/3 c All Purpose flour
1 1/2 oz Yellow Corn Meal, uncooked
1/2 ts Salt
1 tb Baking Powder
3/4 lb Apples, peeled, cored, diced fine
1/2 c Corn, frozen, thawed-or fresh See Note
2 1/4 oz Cheddar cheese, reduced fat-or regular, shredded
1/3 c Sugar
1/4 ts Cinnamon
1/8 ts Nutmeg/ or Allspice

1/3 c Corn oil
3 lg Eggs, lightly beaten

See note: corn, spray a small skillet with pan release spray and lightly brown the corn for a toasted flavor... Use fresh or frozen cooked corn. Use any fruit or cheese for a variety of results.. 1. Preheat oven to 400 degrees F. Line 12 to 14 muffin pans with paper baking cups. 2. In a large bowl combine flour, cornmeal, salt and baking powder. Add fruit, corn, cheese, sugar, cinnamon, nutmeg/allspice. Stir to combine. 3. In a small bowl beat eggs and oil, stir into flour mixture. DO NOT OVERBEAT... THE MIXTURE WILL BE STIFF. 4. Fill baking cups and bake in center of oven for 15 minutes. Let muffins lightly brown on top.

At Panorama Farms in Ellijay we made this recipe in Mini-Cake Pans so that we could make them in the Kitchen-Aid Toaster oven. We reduced the oven temperature down to 347ยบ and baked them for about 18 minutes turning them end for end once during the baking process. Chef Mike's recipe
