Chicken Under a Brick
2 tsp. grated lemon zest
juice of 1 lemon
1 Tbl. chopped rosemary
1 1/2 tsp. fresh oregano
1 1/2 tsp. fresh thyme
1/2 c. Extra Virgin Olive Oil
1 3-4 lb. chicken Breast
salt and pepper

Combine first 5 ingredients; whisk in Extra Virgin Olive Oil. Put in plastic bag. Place chicken, breast side down on work surface. Using a knife or poultry shears inside the cavity, cut thru the ribs along one side of the backbone. Make a second cut thru the ribs along the other side of the backbone. Remove and discard the backbone or save it for stock. Turn chix over and with the heel of your hand , press down on the ribs and flatten. Marinate for 1 hour in plastic bag. Oil grill. Remove chix from the marinade and pat dry. Rub skin side with plenty of oil and season with salt and pepper. Place chix skin side down on the grill. Put pie plate or sheet pan on chix and weigh down with 2 bricks. Grill covered for 45 minutes.
