Chicken and Ham Pie
Chicken and Ham Pie
4 Tb of Irish butter
1/4 cup of flour
2 cups chicken stock
1/2 c half and half
1/4 c chopped onion
6 oz sliced mushrooms
1 cup fresh/frozen peas
1 cup cooked chicken breast diced
1 sheet of puff pastry at room temp for 30 mins
1 large egg beaten
1 c diced ham

In a med sauce pan over med heat melt the butter and add the flour(ROUX) Cook for about 2 minutes.Add the chicken stock and whisk until the mixture thickens,about 2/3 minutes. Reduce the heat to to low and add the rest of the ingredients except the egg and puff pastry. When warmed through add to baking dish. Roll out the puff pastry and fit it on top of the filling. Dock the dough with a fork. (Little pricks to keep the dough from puffing to much). Brush with the beaten egg and place in a 350oven for about 20-25minutes. Check the dough at 20 Min's and adjust as needed. Let cool 5 minutes then serve.
