Serves: 3 - 4

4 strips thick cut bacon
½ lb mild pork sausage
1 Sweet medium onion, sliced
2 Minced chipotle peppers in Adobo sauce
1 Tbs cumin
4 Tbs butter
5 Corn tortillas cut into ¾” squares
3 Eggs, whipped

Preparation Brown bacon and pork sausage in medium skillet. Remove bacon and sausage from skillet and set aside, reserving rendered fat. Add onion, chipotle and cumin to skillet and sauté until onions become translucent. Set aside. In a large skillet, melt butter on medium high heat and add corn torilla slices. (Optional – add 1 tsp pumpkin seed oil to pan). Fry tortilla slices until somewhat golden brown. Add eggs and cook until eggs begin to set. Add bacon, pork, and onions to skilllet and mix well, ensuring eggs have now cooked through.
