CnFM Grilled Corn on the Cob
Serves: 4 - 6

8 lg Ears of corn
4 md Limes quartered
Garlic butter recipe follows
1/2 c Cotija Cheese
2 tb Chopped chives (garnish)
-------------------------GARLIC BUTTER INGREDIENTS-------------------------
2 ea Butter 2 sticks unsalted
8 lg Garlic cloves chop coarse
1/4 md Habanero seeded (or other)
1/4 bn Fresh Chives 1/4 bunch
Salt and fresh black pepper

Preheat Big Green Egg to medium. Peel back the husks of the corn without removing them, de-silk the corn and recover with the husks. Soak in large bowl of (salted) water for 30 minutes. Remove corn from water and shake off excess. Place the corn on the grill and put the cover down, grill for 15 to 20 minutes.
Unwrap corn and brush with garlic butter, sprinkle with Cotija cheese and squeeze with lime. sprinkle with chopped chives to garnish. Eat well

Directions on the garlic butter...
Combine butter, garlic, Habanero, and chives in a food processor and process until smooth, season with salt and pepper, set aside until ready to use.
