Chorizo Crusted
Scallops
8oz of Chorizo sausage finely chopped
1/2-3/4 cup bread crumbs
16 large sea scallops
1/2 cup of flour
2 eggs slightly beaten
In a hot saute
pan render the Chorizo for 2-3 minutes.
Remove from the heat and put in the food processor and pulse with the
bread crumbs until it binds.
Season the scallops and dredge in the flour,then into the beaten eggs.
Then into chorizo crust.
Heat another skillet with olive oil till med high pan fry the scallop
till golden brown .
Drain on paper towel and serve
