Cream of Mushroom Soup with Brie Cheese
Serves: 10 cups

1 oz. butter
2 lbs. fresh sliced mushrooms
1 lg. onion diced
1 clove minced garlic
3/4 tsp thyme
3 cup cream
1 cup beef broth
enough corn starch to make a slurry
1/2 cup sherry, or port, or marsala wine
8 oz. Brie cheese, rind removed

In large saucepan sauté the onions and garlic in the melted butter.
Add mushrooms and sauté for 5 more minutes.
Make Slurry
Add thyme, cream and the slurry, bring to a boil, stirring frequently
reduce to a simmer.
Simmer 10 minutes, stirring frequently.
Add the sherry, stirring well so as not to curdle the cream.
Start adding the brie a small piece at a time, stirring constantly, until it is all incorporated.
Season with salt and pepper.
