Creole Sauce
Creole Sauce
2 whole bay leaves
tsp dried oregano leaves
tsp salt
tsp white pepper
tsp ground red pepper
tsp sweet paptrika
tsp black pepper
tsp dried thyme leaves
tsp dried sweet basil leaves
4 tbl unsalted butter
1 cup peeled and chopped tomatoes
cup chopped onions
cup chopped celery
cup chopped bell peppers
1 tsp minced garlic
1 cups basic chicken stock
1 cup canned tomato sauce
1 tsp sugar
tsp Tobasco/Lousiana hot sauce

Thoroughly combine the seasoning mix ingredients in a small bowl and set aside. Melt the butter in a large skillet over medium heat. Stir in the tomatoes, onions, celery and bell peppers; then add the garlic and seasoning mix, stirring thoroughly. Saute until onions are transparent, about 5 minutes, stirring occasionally. Stir in the stock, tomato sauce, sugar and hot sauce; bring to a boil. Reduce heat to maintain a simmer and cook until vegetable are tender and flavors are married , about 20 minutes, stirring occasionally.

Try over Chicken and Sausage Jambalaya or any other dish....this rocks!
