Dry Rubbed Ribs
1 slab of pork ribs. Pull the membrane from the rib side-See ChefNote.
1 mixture of dry rub mixture. -See instructions for mixture
1 BGE at 350 & have plenty of Jack Daniels smoking chips
**** My mixture for the rub consisted of ****
3 tbs of chili powder
2 tbs cumin
2 tbs of kosher salt
2 tbs of pepper
1 tbs Cayenne

Wash and pat dry your ribs. Make sure that the membrane on the non-meaty side is pulled off. Mix these together in a separate bowl and rub all over the ribs. Place in a big zip=lock bag and let them marinate for at least 2 days. Get the Egg up to 350 and place 2 handfuls of dry Jack Daniels chips in the bottom. Enjoy

These fine recipes cooked at "Good Life II" by Chef Fred on 01-31-2005 ChefNote: loosen a corner of the membrane with a paring knife and with a small towel, grab the membrand and pull it diagonally across the ribs to remove it. Some scraping of the ribs may be required but this step is important to let the flavors of the dry rub contact the meat and make the ribs more tender.
