2 lbs ground beef( save some for the stuffed peppers)
1 small onion (diced)
1 bunch cilantro(chopped)
1 small bell pepper(color?)S&P
1 pack corn tortilla
1 container of salsa
1 pack of cheese(you pick)

In a med high skillet begin to brown ground beef. When cooked place ground beef in colander and drain(sorry Kev don't want all that fat). In the same skillet begin to saute the onions ,pepper and Cilantro. Add a little oil if needed. After a few minutes add the ground beef back in and stir to mix. Take the tortilla and add some of the ground beef mixture. Roll over the tortilla and place in casserole dish. Heat oven to 350. Ladle the salsa over the Enchiladas. After about 20 mins top the enchiladas with the cheese and melt. Serve with sour cream and a little more salsa.
