Green Bean and Jicama Salad

1 med sized Jicama
3/4 lb green beans
(fresh) Field greens
A very good Extra virgin olive oil
Salt and Pepper

Blanch your green beans in salted water for about 1 -1/2 minutes.
Remove and place in an ice bath.(bowl of ice water).
Cut the Jicama into matchsticks and set aside.
In a large bowl mix field greens,Jicama, and green beans.
Drizzle a little oil and season with salt and pepper.
Refrigerate and serve
