Grilled Spanish Mackerel San Salvador
6 large Spanish mackerel fillets (8-ounces each)

ΒΌ cup blended olive oil

6 tablespoons Lemon Pepper seasoning

Preheat grill on medium heat.

Rub both sides of the Spanish mackerel fillets with olive oil and place them skin side down onto a piece of heavy duty aluminum foil that is big enough to hold all the fillets.

Sprinkle fillets with lemon pepper seasoning.

Grill until fish just begins to flake; do NOT flip fillets.

Top filets with 2 ounces of Tequila Vinaigrette
