Leftover Ham and Cheese Omelet
6 oz diced ham
4 large eggs
3 oz heavy whipping cream cheese (personal preference I perfer a strong cheddar).

In a med skillet melt butter over med heat. In a bowl whisk together the eggs,cream and a little S&P. Pour into skillet and work with a spatula almost creating scrambled eggs. Stop let set and add the ham and cheese and anything else you might like. When set slowly side omelet toward plate stopping half way and folding over the rest.
