Linda's Potato Salad
Serves: 8

3 lbs small, red, bliss potatoes (cut in small pieces and skin on)
1/2 cup onions (chopped fairly small RealSweet Vidalia's if you can get them)
1/2 cup of hot-dog relish
2 hard boiled eggs (chopped)
3/4 + cup mayo (more as needed)
S&P to taste

Boil the potatoes till fork tender. Drain well and place in fridge till cool. Peel the eggs, chop the eggs. In a large mixing bowl combine all ingredients and adjust the seasoning. Place salad back into the fridge for at least 3 hours
