Lobster Bisque
Lobster Bisque
Live 2-3 lobsters (Maine)
6 cups salted water
3 tablespoons of butter
2 celery ribs
2 leeks (sliced and washed)
1 med onion chopped
2 tablespoons flour
1 1/4 cup heavy cream
1 lobster tail chopped

Bring salted water to a boil and place lobsters in the water cook for about 8-10 mins. Remove lobsters and allow to cool. Remove tail meat and place shells back into water. In another sauce pan melt the butter and saute the vegetables about 5 minutes. Add the flour and continue to stir. Strain the lobster stock into the vegetables whisk till smooth. Puree the soup and slowly bring soup back up to temp. Slowly add the cream and garnish with chopped tail meat
