Moo Goo Gai Few=Chicken and Mushrooms in Wine Sauce

8 oz. chicken breasts sliced
1 1/2 c. fresh mushrooms, whole or cut in half
2 bunches celery hearts cut in chunks
1 small carrot sliced
3 1/2 tsp. cooking wine
1 1/2 tsp oil
1 c. oil for frying
few drops sesame oil
3/4 tsp. salt
pinch of white pepper and garlic powder
1/4 tsp. minced garlic
1/2 tsp. sugar
2/3 tsp. oyster sauce
1/2 tsp soy sauce
1/2 tsp. corn starch
1/2 c. chicken broth

Marinate chicken in salt, pepper, garlic powder ,sesame oil 1/2 tsp. wine and 1/2 tsp corn starch. Add one tsp of oil to coat chix. Gravy Mix 1/2 tsp salt ,sugar, soy sauce, oyster sauce, one tsp wine, 1 tsp oil and add to chicken broth. To Cook Heat wok and add 1 cup oil until hot. Braise chicken till 75% done. Remove from heat. Remove chicken and drain oil. Return o high heat and add 2 tbls of oil. Add chicken and minced garlic. Stir until garlic starts to turn brown. Add mushrooms, celery, and carrot. Stir for 10 seconds, sprinkle with 2 tsp. wine and cover. After 10 seconds, remove cover and add gravy mix. Stir until it thickens. Remove from heat and serve.
