Poached Apricots in cardamom syrup

1⅔ Cups Dried apricots

3 Tablespoons Superfine sugar

1 1/2-inch piece of peeled fresh ginger

4 Whole green cardamom pods

1 Cinnamon stick

    1. Soak the apricots in 3 cups of water for 4 hrs or until they puff up

    1. Add in: 3 Tbs of sugar One 1/2-inch piece of thinly sliced ginger,4 cardamom pods, 1 cinnamon stick

    2. Mix everything together until the sugar has dissolved and bring it all to a slow boil.

    1. When it boils, turn the heat down to a simmer and cook gently until the liquid has gone down by half and the remaining liquid has become a thick syrup.

    1. Pour everything into a bowl and refrigerate
