Pork Roulade (served with mustard sauce)
Serves: 4 or 8

4 6-ounce boneless pork chop or thin sliced pork tenderloin pounded thin
4 slices ham
4 slices smoked gouda cheese
4 whole green bean or asparagus spears -- blanched
1 pinch salt
1 pinch pepper
1 pinch herbs de provence

Lay pork cutlet flat and place ham on pork then cheese and then place the asparagus or green bean to one end of the pork, dust with spices. beginning on the end with the asparagus roll the pork tightly, secure with a tooth pick. lightly dust the roulade with flour and sauté till lightly brown on all sides, remove from pan and place in a holding oven while you make the sauce
