Smoked pork loin with vanilla onions
Serves: 4

1 pork tenderloin cleaned and seasoned with Salt and Pepper
3 medium onions sliced thin
1/4 cup of Fee Brothers Vanilla Cordial
1/2 stick unsalted butter

Preheat a Big Green Egg to 350º

Remove as much silver skin from a nice fat pork tenderloin

In a medium sauté pan add a little oil and the onions.

Slowly sweat the onions for about 20 minutes to slowly caramelize them.

Place the pork in the egg set to 350º and add a handful of dry Maple chips

When the onions are soft add the butter and the Fee Brothers Vanilla Cordial Taste and season with salt and pepper

When the pork is done (160º internal then let it rest covered with foil for 15 minutes) slice on the bias and top with the Vanilla onions.
