Southwest Chicken Manicotti
Serves: 4

8 Pasta sheets or manicotti shells
1 1/2 cups cut up cooked chicken
1 cup ricotta cheese or cottage cheese
4 oz. cream cheese softened
1 bunch sliced green onion
fresh cilantro to taste
1 finely chopped garlic clove
1 cup salsa or 1 can green Chile enchilada sauce
1 cup Mexi blend shredded cheese

Method: Combine all these ingredients; fill manicotti shells with mixture. Put in a 13x9 baking pan. Pour 1 cup of salsa over the shells, top with Monterey Jack cheese. Cook for 35 min. at 325.
