Spicy beef Ribs
2 lbs. beef short ribs
1 Tbl. Schezwan salt
2 Tbl. dark soy sauce
2 tsp. cornstarch
1 oz. sesame oil
1 Serrano chili, minced
1 inch ginger, minced
3 cloves garlic, minced
2 oz. Chinese cooking wine
4 c. chicken stock
1/4 c. brown sugar
2 Tbl. Hoisin sauce
1 tbl. chili garlic sauce

Rub the ribs with salt and pepper. Combine the soy sauce and cornstarch and then submerge the ribs in the soy mixture. Heat sesame oil in a large saucepot over medium high heat. Add the chilis and ginger. Saute for 1 minute and then add garlic. Cook until the garlic starts to brown and then add the wine. When most of the wine has evaporated, add the chicken stock, brown sugar and the ribs with the marinade. Partially cover the pot and simmer for about an hour. The sauce should start to thicken. Add the hoisin and chili garlic sauce and cook until the rib meat is tender.
