Stuffed Turkey Breast
Stuffed Turkey Breast

8 oz. sweet Italian sausage removed from casing
5 oz. prosciutto, diced finely
1 c. chopped water chestnuts
1/2c. diced green olives
2 Tbl chopped sage
salt and pepper
1 4lb. boneless turkey breast
Extra Virgin Olive Oil

Combine sausage, prosciutto, chestnuts, sage, olives, salt and pepper. Place turkey breast on cutting board skin side down. Flatten with your hands. Season with salt and pepper. Drizzle with olive oil. Spread stuffing on top of turkey and roll turkey around the stuffing. Wrap with kitchen twine and tie tightly. Drizzle with more olive oil and salt and pepper. Preheat grill to 375º. Cook until internal temp is 165º- 1 hour or 12 to 5 minutes per pound.
