Three Pepper Seared New York Strip Steak
4 6oz. new York Strip steaks
1 Tbl whole black peppercorns
1 Tbl whole pink peppercorns
1 Tbl whole green peppercorns
canola oil

Preheat oven to 400º F Place the peppercorns in a coffee mill or spice grinder. Grind the peppercorns to a coarse consistency. Rub the steaks with a little oil and coat both sides well with the peppercorns and salt. Heat a large sauté pan with just enough oil to coat the bottom of the pan. Sear both sides of the steak and finish in the oven until cooked to perfection (your choice). 135º internal temperature is rare. 138º medium. 140º+ well done. Remove the steaks from the oven and allow them to rest at least 5 minutes before slicing.
