Tomato Galette

Sheet of puff pastry
2 large tomatoes(heirlooms are perfect)
5 oz of soft goat cheese
3 heads of roasted garlic

In a 350 degree oven roast your garlic for about 1 -1 1/2 hours till soft.
Let cool.Meanwhile roll out your puff pastry.
Slice your tomatoes and season with a little salt and let set for about 10-15 mins (to pull out some moisture).
In a mixing bowl combine the goat cheese and roasted garlic to form a paste add Extra virgin olive oil to loosen up the mixture.
Take the goat cheese/garlic shmear and spread onto the puff pastry.
Now top with tomatoes.
Place on a baking sheet and bake 350 for about 20-25 mins.
Cut and serve warm.
