Warm Scallop BLT Salad
12 U-10 scallops
1 head green leaf lettuce
2 Beef Steak tomatoes
3/4 lb bacon
1 1/2 cups balsamic vinegar
2 tsp of brown sugar
12 med slices of a crusty Italian loaf

In a large skillet over med heat begin cooking bacon. In a large bowl while the bacon is cooking cut the lettuce and dice the tomatoes. When bacon is finished drain on several paper towels. Discard the bacon fat except for about 2 tsps. Bring the bacon fat back up to med high and begin cooking scallops. Place the bread in a toaster oven and toast. When scallops are finished remove from the pan and let rest for about 2 mins. De glaze the pan with the balsamic vinegar and brown sugar***. When the vinegar has reduced by about 2/3 turn off the heat. Place the bread around the outside of your salad bowl and place 2 scallops on each piece of bread. Crumble the bacon and sprinkle on top of salad,take your sauce(now your dressing) and drizzle over the top.

***When reducing vinegar pour it into the pan and step back.The fumes form the vinegar will take your breathe away and cause your eyes to burn.
