White Cheddar and Scallion Muffins
White Cheddar and Scallion Muffins
1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1 1/4 tsp. salt
1/4 tsp. cayenne pepper
4 Tbl cold unsalted butter cut into cubes
1/4 c. finely chopped scallion greens
3 oz. extra sharp Boar's Head horseradish cheddar
1/2 cup plus 2 Tbl cold milk

Preheat oven to 375ยบ. Lightly grease two 12 cup mini muffin tins. In a medium bowl, mix the flour, baking powder, salt and cayenne. Work in the butter until the mix resembles coarse meal with some small pieces of butter still visible. Add the scallions, cheese, milk and stir with a wooden spoon until the dough comes together. scoop the dough into the prepared muffin tins. Bake about 25 minutes, until the muffins are lightly browned on top. Transfer the muffin tins to a wire rack to cool slightly. Serve warm.
